The answer is warm water with temperature of 80oC. According the Heston (British Chef), the trick to cook perfect poached eggs is to use fresh eggs (i.e. just laid by the hens)
Cook the eggs in the warm water for about 4 minutes, and scoop them out with a spoon, and season with salt and papper.
