What's the simple way to cook carrot halwa, a norther Indian dessert?

Someone said the Indain dessert carrot halwa is accutually a delicious thick and milky carrot pudding. It is true, to make simple carrot halwa, you only need carrots, cardamom, milk, cashew powder and ghee. To garnish, you can prepare some roasted nuts and rasins.

  • Wash, peel and grate six big carrorts, perferrably organic.
  • Heat 3 tbsp ghee in a pan, and then add grated carrots and half cup of green cardamom
  • saute for 2 minutes
  • Add one and half cup of milk
  • cook on low heat till milk is absorbed. The mixture becomes thick after about 45 minutes
  • Add one and half cup of sugar and cook for another 5 minutes.
  • Add half cup of cashew powder and stir the mixture well.
  • Simmer for 5 minutes.
And you are done, don't forget to garnish it with roasted nuts and raisins if you have.
