According to Britannica Encyclopedia, Caviar is defined as the following:So we can see that caviar is from sturgeon - fish that belongs to family Acipenseridae. There are 26 species of Sturgeon, and among those Acipenser and Huso are the best known ones. Unfortunately around 85% species of sturgeons are at risk of extinction because of the good price of caviar.
