How do you cook sea bass in Chinese style?

There are many ways to cook sea bass in Chinese style. One of the most popular recipe is to cook it with dark soy sauce.

Ingredients:

  • 1 guttered sea bass with the head on
  • 2 cm ginger, cut into fine slices
  • 3 clove garlic
  • 1 or 2 red chilli cut into thin slices
  • 4 spring onions chopped into small pieces
  • 1 small handful roughly chopped coriander
  • 2 tbsp vegetable oil
  • 2 tbsp dark soy sauce
  • 1 tbsp dark chinese cooking wine
  • 1 tsp sugar

Method:
  1. season the sea bass with salt and leave it for two hours before cooking
  2. heat the wok and add vegetable oil
  3. add the sea bass when the oil is sizzling hot
  4. quickly fry the both sides of the sea bass
  5. add cooking wine, soy source, chili, ginger, garlic and some water.
  6. Cover the wok with a lid and cook for about 10 minutes on a medium heat
  7. garnish the dish with spring onion and coriander.
