Truffles are an edible fungus which grows underground around the roots of trees such as oak, birch and beach.
There are actually over 60 British species but only a few are edible and these are rarely found as locations of truffles are often jealously guarded.
The best places in the uk to find truffles are the forests in Wiltshire, Berkshire and Dorset.
The main varieties of truffle found in the uk are the tuber aestivum the summer truffle found from July - September and the tuber uncinatum (burgandy truffle) which appears in Autumn.
The tuber aestivium is seen as an inferior truffle in Italy where the most prized truffles and subsequently most expensive are the tuber melanosporum (Black Périgord) priced at around £1,000 a kilo and the even rarer white truffle, tuber magnatum which fetches £2,000 a kilo.
