There are several ways to say 'Nice to meet you' in Spanish. You should say:

-Encantado (if you are male)
-Encantada (if you are female)
It means literally 'I'm delighted'
There is a longer form:
-Encantado de conocerte
-Encantado de conocerle (more polite)
It means literally 'I'm delighted to meet you'.

You can use as well another form, more simple but also very common:
-Mucho gusto
The literal meaning is (I) very much like
If someone says this to you, you'd like to answer:
-'El gusto es mio'
