What is the meaning of teriyaki? What are some good teriyaki recipes?

Teriyaki is a Japanese word, a combination of two other words: teri meaning the shiny glaze which comes from a sugar-containing marinade (a tare in Japanese) and yaki for a grilling type cooking method. In English the word often gets used to refer to a soy based sauce, containing sugar, which is used to marinate a lot of dishes.

To make your own teriyaki sauce you need soy sauce, brown sugar, ginger, cornflour and a few other basic items - you can find an easy to follow recipe here. Or you can buy ready made teriyaki sauce from most supermarkets. Once you have the sauce you can put it on most kinds of meat - chicken and lamb are very good - and it can also be good with fish, especially salmon.
