Where can I buy good quality caviar?

Russian caviar is the most highly prized, as the sturgeon fish found in the Russian Caspian sea produces larger and tastier roe (eggs) than those found elsewhere. Generally with caviar, biggest is best, as the most prized Russian caviar comes from the Beluga sturgeon, which again is the largest type and has the largest roe. They are dark grey to black, and would be extremely expensive, (but in fact at the moment they are banned from sale in the USA due to extreme rarity, and this will probably not change until beluga stocks recover.)

The other two caviar types to look for are Osetra and Sevruga. Sevruga is similar in colour to beluga but smaller, and Osetra has a more brownish or yellowish colour. These can cost anything from $90 to $140 for an ounce.
