To make completely authentic tandoori chicken you need a tandoor. This is a kind of clay oven shaped like a pot, and makes the food very hot so that you get that typical browned outside and soft moist inside. You can buy these ovens both for home and catering use, but prices vary so it's worh putting 'tandoor' in a search engine and shopping around a bit.

If you don't have a tandoor, a very hot barbecue style grill is the next best thing. A tandoor can reach a hear of 800 F or 426 C, so a normal oven isn't much use. Once you have found a cooking method that provides enough heat, the right blend of spices is the most important thing - and these must be fresh.
