It depends which 'turkey' you mean. If you mean the country 'Turkey', it is translated as '土耳其' in Chinese, which is prounced as 'tǔ ěr qí'.

If you mean the bird 'turkey' , it is translated as '火鸡' in Chinese, which is prounced as 'huǒ jī'. If you mean the 'turkey' meat, you can say '火鸡肉' which is pronounced as 'huǒ jī ròu'.
