How do you cook a traditional Spanish paella?

If you type the words ' traditional paella' in a search engine you will see that, as with most traditional recipes, there are lots of variations and everyone thinks their own version is the best! You can see a few examples here to start with.

However, to get a good paella there are certain essentials. These are fresh seafood, chicken, good chorizo, rice and saffron. Ideally you would use a paella pan but if you don't have one, a wide shallow pan will do the job.

Real original paella comes from Valencia in the east of Spain, and originally included rabbit. This is often not used today, and if you don't have special Spanish rice you can use a risotto rice such as arborio. Still, if you want to try an original Paella Valenciana, it would look something like this.

Generally, with traditional recipes it's often more fun to adapt them to your own tastes, as no two people will agree on the right way to cook them! But I've never met a paella I didn't like, and I'm sure you'll enjoy yours whichever recipe you use.
